Homemade Mayonnaise

I never knew homemade mayonnaise was so easy and quick to to make. I should have been doing this for years! And the flavour of the mayonnaise is better than even the best store bought brand.


1 egg

1 teaspoon Dijon mustard

1 tablespoon lemon juice

pinch salt

250 ml extra-virgin olive oil


1. Blend all the ingredients except the oil for 30 seconds in a food processor on a low speed.

2. With the motor running, add the oil in a slow drizzle until the mayo is thick and smooth.

This recipe is from Sarah Wilson's "I Quit Sugar" book. It will keep for 2-3 weeks in the fridge and makes about 300 ml of mayonnaise.
